According to the Speciality Coffee Association of America (SCAA) a coffee that receives a score of 80 points or more in a 100 scale is considered specialty coffee.
Euforia, has a score of 86.5 and this score is given by a certified coffee sommelier from the Coffee Quality Institute (CQI) in United States, whom consider every art involved in the production process from harvesting to preparation.

Harvesting is a very meticulous process that is specific to a particular region and carries special conditions of temperature, shade, humidity and altitude.
All this factors influence directly in the quality of the grain, which goes through an ancestral production process where the use of chemical herbicides and pesticides are completely eliminated since they did not exist before.

Specialty coffee is always hand-picked by coffee growers in charge of selecting coffee cherries when they are at their most mature point. This way avoiding any green or over-matured cherries which will bring a bitter taste to the coffee.
